  1. Husk the corn: Start by gently pulling back the husks of the corn, but don't detach them completely. Remove the silk (those pesky stringy bits).
  2. Prepare the lemon-pepper butter: In a small bowl, soften the butter. You want it to be easily spreadable but not completely melted. Add the lemon zest, lemon juice, cracked black pepper, and salt. Mix until everything is well combined. Taste and adjust seasonings as needed. I usually go a little heavier on the pepper, because, I mean, its delicious!
  3. Re-wrap the corn: Spread about a tablespoon of the lemon-pepper butter directly onto the corn kernels. Then, pull the husks back up around the corn, encasing it like a little package. This will help steam the corn while it grills and prevent it from drying out. If the husks seem flimsy, secure them with kitchen twine.
  4. Grill the corn: Preheat your grill to medium heat (around 350-400°F or 175-200°C). Place the corn directly on the grill grates. Grill for about 15-20 minutes, turning occasionally, until the husks are charred and the corn is tender. You should hear a slight sizzling sound as the butter melts and infuses into the corn. Don't be afraid to get some char on those husks – it adds to the flavor!
  5. Check for doneness: To check if the corn is done, carefully peel back the husks (be careful of the steam!). The kernels should be plump and easily pierced with a fork. If they're not quite there, grill for a few more minutes.
  6. Serve immediately: Once the corn is grilled to perfection, remove it from the grill. Let it cool for a minute or two – because hot corn and your mouth don't mix! – then peel back the husks completely. You'll also want to baste it with the lemon-pepper butter throughout the grilling process to keep it moist.
