I'll never forget the first time I tried chipotle peppers. A friend brought some back from a trip to Oaxaca, Mexico, and their smoky heat was unlike anything I'd ever tasted. I've been hooked ever since. Now, I love incorporating them into my cooking, and this flank steak recipe is one of my favorites, I always mess up the chipotle pepper measurement. It always turns out way too spicy the first try lol. It’s incredibly easy to prepare and delivers a burst of flavor in every bite. Perfect for a laid-back summer evening, or heck any day of the week really if you ask me!

Flank steak is already a great choice for grilling because it's relatively lean and cooks quickly. But the chipotle marinade takes it to a whole new level. The smokiness of the chipotles, combined with the tangy lime juice and the savory garlic, creates a taste sensation that's both complex and incredibly satisfying. If you’re looking to impress your friends and family with minimal effort, this recipe is your secret weapon. Trust me on this one!

📖 Instructions

  1. Prepare the Chipotle Marinade: In a bowl, combine the chopped chipotle peppers in adobo sauce, minced garlic, lime juice, olive oil, cumin, oregano, salt, and pepper. Stir well to ensure all ingredients are thoroughly mixed.
  2. Marinate the Flank Steak: Place the flank steak in a large resealable plastic bag or a shallow dish. Pour the chipotle marinade over the steak, ensuring it is fully coated. Seal the bag or cover the dish, and refrigerate for at least 2 hours, or preferably overnight. The longer it marinates, the more flavorful it will become! I try to do it overnight for maximum flavor impact.
  3. Preheat Your Grill: About 30 minutes before grilling, remove the flank steak from the refrigerator. Preheat your grill to medium-high heat (around 375-450°F or 190-230°C). Make sure the grates are clean and lightly oiled to prevent sticking.
  4. Grill the Flank Steak: Place the marinated flank steak on the preheated grill. Grill for about 4-6 minutes per side for medium-rare, or longer depending on your desired level of doneness. Use a meat thermometer to check the internal temperature; 130-135°F (54-57°C) for medium-rare, 140-145°F (60-63°C) for medium. Be careful not to overcook the steak, as it can become tough.
  5. Let It Rest: Once the flank steak is grilled to your liking, remove it from the grill and place it on a cutting board. Tent it loosely with foil and let it rest for at least 10 minutes. This allows the juices to redistribute throughout the steak, resulting in a more tender and flavorful cut.
  6. Slice and Serve: After resting, use a sharp knife to slice the flank steak thinly against the grain. This is crucial for ensuring tenderness. Serve immediately. Garnish with fresh cilantro or a squeeze of lime juice, if desired. I like to serve mine with grilled veggies and a side of rice or quinoa. So yummy!
  7. Serving suggestions. serve with fresh avocado slices or a dollop of sour cream or plain Greek yogurt to cool it down. You could also make a simple salsa with diced tomatoes, onions, and cilantro to brighten up the flavors. Don’t forget the tortillas for some amazing steak tacos! Make sure to eat the side dishes with the steak. You want to be happy, don't you?

📝 Notes

  • For a spicier kick, add an extra chipotle pepper or a pinch of cayenne pepper to the marinade.
  • If you don't have a grill, you can broil the flank steak in the oven. Broil for about 6-8 minutes per side, or until cooked to your liking. Keep a close eye on it to prevent burning.
