I remember this one summer, back when I was just starting out, I was asked to cater a small backyard BBQ. I wanted to do something different, something that would make people say, 'Wow, that's actually amazing.' I saw a huge pile of fresh corn and it hit me – why not fancy it up a little? That's how this Grilled Corn with Cinnamon-Maple Butter was born. It was a hit! People couldn't get enough, and to this day, it's one of my most requested recipes. Believe it or not, my aunt still makes a version of it during the holidays! Who says corn on the cob is only for summer, am I right?

The beauty of this recipe lies in its simplicity. Grilling the corn brings out its natural sweetness, while the cinnamon-maple butter adds a layer of warmth and complexity that perfectly complements the smoky char. It’s the kind of dish that seems fancy, but is actually incredibly easy to make – perfect for impressing guests without spending hours in the kitchen. Plus, it’s infinitely customizable. Feel free to tweak the spices to your liking. A little pinch of chili powder? Smoked paprika? Go wild! Cooking should be fun and don't be afraid to take some risks! I promise it's hard to mess this up!

📖 Instructions

  1. Husk the corn: Gently pull back the husks of the corn, but don't detach them completely. Remove the silk (those pesky little strands) from the corn. You can use a clean toothbrush to help with this or even just a damp paper towel.
  2. Soak the corn (optional): If you're using a gas grill or the corn is particularly dry, soak the corn (with the husks still attached) in cold water for about 30 minutes. This helps prevent the husks from burning too quickly and keeps the corn moist. If you're using charcoal, soaking isn't as crucial.
  3. Prepare the grill: Preheat your grill to medium heat (around 350-400°F or 175-200°C). Whether you're using gas or charcoal, make sure the grill grates are clean. Consider giving them a scrub with a wire brush.
  4. Grill the corn: Place the corn on the grill, close the lid (if you have one), and cook for about 15-20 minutes, turning occasionally, until the husks are charred and the kernels are tender. If the husks start to burn too much, you can wrap the corn in foil for the last few minutes of grilling.
  5. Prepare the cinnamon-maple butter: While the corn is grilling, make the cinnamon-maple butter. In a medium bowl, combine the softened butter, maple syrup, ground cinnamon, and a pinch of salt. Mix well until everything is evenly combined and the butter is smooth and creamy. Taste and adjust the sweetness or spice to your liking. Maybe you want more cinnamon, less maple or even a dash of vanilla extract!
  6. Unwrap the corn: Once the corn is cooked, carefully remove it from the grill. Let it cool slightly before handling. You can now peel back the husks completely or leave them partially attached for a rustic look. I personally like to keep some of the husk for presentation purposes!
  7. Butter the corn: Generously spread the cinnamon-maple butter all over the grilled corn. Make sure to get into all the nooks and crannies for maximum flavor. A pastry brush works great for this, or you can just use a regular butter knife.
  8. Serve immediately: Serve the grilled corn with cinnamon-maple butter immediately. Garnish with a sprinkle of flaky sea salt or some chopped fresh herbs, if desired. And that's it! Dig in and enjoy! I guarantee you'll love it!

📝 Notes

  • For a spicier kick, add a pinch of chili powder to the butter.
  • Feel free to use honey instead of maple syrup for a different flavor profile.
  • If you don't have a grill, you can also roast the corn in the oven at 400°F (200°C) for about 20-25 minutes.
