📖 Instructions

  1. Preheat your oven to 400°F (200°C). This is important for even roasting. Seriously, don't skip this step!
  2. Wash and trim 1 pound of Brussels sprouts. Cut them in half (or quarter if they're large). We want them all roughly the same size for even cooking, yah know?
  3. Wash and dice 1 medium zucchini into bite-sized pieces. Similar to the brussel sprouts, you want em' bite-sized.
  4. In a large bowl, combine the Brussels sprouts and zucchini. We want them to be friends before they get baked.
  5. Add 4 slices of bacon, cooked and crumbled. Save some bacon grease! We'll use it later.
  6. Drizzle with 2 tablespoons of pure maple syrup and 1 tablespoon of reserved bacon grease. This is where the magic happens.
  7. Season with salt and pepper to taste. Don't be shy! It's gotta be seasoned well or it'll taste like blah.
  8. Toss everything together until well coated. Make sure every piece is getting some love.
  9. Spread the mixture in a single layer on a baking sheet. Overcrowding will steam the veggies instead of roasting them. Nobody wants soggy veggies!
  10. Bake for 20-25 minutes, or until the Brussels sprouts are tender and slightly browned. Keep an eye on it - ovens vary!
  11. Remove from oven and let cool slightly before serving. I always burn my tongue if I don't wait. Learn from my mistakes!
  12. Serve warm and enjoy! Maybe add a sprinkle of extra crumbled bacon? Just sayin'.

📝 Notes

  • For a vegetarian version, omit the bacon and use olive oil instead of bacon grease.
  • Add a pinch of red pepper flakes for a little heat.
  • I often add garlic powder. It's amazing
