Think about starting your day with this beauty! The parfait offers a healthy alternative to those sugary cereals and pastries. Packed with antioxidants from the berries, protein from the yogurt, and anti-inflammatory properties from the ginger, it's a guilt-free indulgence that will leave you feeling satisfied and energized. Plus, the best part? You can customize it to your heart's content. Use your favorite berries, experiment with different types of yogurt (Greek, skyr, or even a plant-based option), and adjust the amount of ginger to suit your taste.

📖 Instructions

  1. Begin by preparing your berries. Gently wash and pat dry about 1 cup of mixed berries (strawberries, blueberries, raspberries, blackberries - whatever calls to you!). If using large strawberries, slice them into smaller, bite-sized pieces.
  2. Next, grate about 1 teaspoon of fresh ginger. If you're not a fan of ginger's intensity, start with half a teaspoon and adjust to taste. Remember, a little goes a long way!
  3. Now, grab your favorite yogurt. I prefer Greek yogurt for its creamy texture and high protein content, but feel free to use any yogurt you like – regular, vanilla, or even a plant-based option. For each parfait, you'll need around 3/4 cup of yogurt.
  4. In a small bowl, combine the grated ginger with the yogurt. Stir well to ensure the ginger is evenly distributed throughout the yogurt. This infuses the yogurt with that lovely zing!
  5. Time to assemble the parfait! Grab a clear glass or jar to show off those beautiful layers. Start with a layer of yogurt (about 1/4 cup) at the bottom. This creates a creamy base for the berries.
  6. Add a layer of mixed berries (about 1/4 cup) on top of the yogurt. The vibrant colors of the berries will start to make your parfait look extra appealing!
  7. Drizzle a tiny bit of honey on top of the berries to give it a touch of sweetness. This is totally optional, but I think it adds a nice touch.
  8. Repeat layers of yogurt, berries, and honey (if using) until you reach the top of the glass. Usually, three layers is enough, but you can adjust based on the size of your glass and how hungry you are. I usually do like, 4.
  9. Garnish with a few extra berries and a sprig of mint for that final touch of freshness. This makes the parfait look extra fancy, even though it only takes seconds!
  10. If you’re not planning on eating the parfait immediately, cover the top with plastic wrap and store it in the refrigerator. It's best enjoyed within a few hours to prevent the berries from making the yogurt watery. Though I doubt it'll last that long, ha!
  11. Before serving, give it a quick glance. Does it look appealing? Sometimes I like to add a sprinkle of granola for extra crunch, or a few chopped nuts for added texture. Get creative and make it your own!

📝 Notes
