Prep the ginger and chili (if using): Peel a small knob of ginger (about 1/2 inch) and finely chop or grate it. If you like a little heat, finely chop half a green chili, removing the seeds if you prefer a milder flavor. If you hate spice, you can skip it. I, personally, love the slight kick it adds.
Combine ingredients in a blender: In a blender, combine 1 cup of plain yogurt (full-fat or low-fat, whatever you prefer), the chopped dill, ginger, and green chili (if using). Add 1/2 cup of cold water. For a sweeter lassi, add 1-2 teaspoons of sugar or honey, or a pinch of salt for a savory version. I usually go with just a *tiny* pinch of salt, but its totally up to you.
Blend until smooth: Blend all the ingredients together until you get a smooth, frothy mixture. This usually takes about 30-60 seconds, depending on your blender. If the lassi is too thick, add a little more water, one tablespoon at a time, until it reaches your desired consistency.
Taste and adjust: Give the lassi a taste and adjust the seasonings as needed. You might want to add more dill for a stronger dill flavor, more ginger for extra zing, or more sweetener if you like it sweeter. This is where you can really make it your own. What does it mean for you?
