Okay, folks, lets get real for a second. Summer in Delhi is…intense, to put it mildly. One of my friends from Chennai, after visiting in June, swore she'd never complain about Chennai heat again. That's when I really double-down on my lassi game. Regular lassi is great, sure, but sometimes you need something more, something… unexpected. Hence, the Dill Delight Lassi! I know, I know, dill in a lassi sounds weird, right? But trust me on this. It's that kinda of weird that really, really works.

The dill adds this vibrant, grassy note that just wakes up your taste buds. The yogurt keeps everything cool and creamy, and a little ginger and green chili give it a nice kick. If you like a little heat, finely chop half a green chili, removing the seeds if you prefer a milder flavor. If you hate spice, you can skip it. I, personally, love the slight kick it adds.
  3. Combine ingredients in a blender: In a blender, combine 1 cup of plain yogurt (full-fat or low-fat, whatever you prefer), the chopped dill, ginger, and green chili (if using). Add 1/2 cup of cold water. For a sweeter lassi, add 1-2 teaspoons of sugar or honey, or a pinch of salt for a savory version. I usually go with just a *tiny* pinch of salt, but its totally up to you.
  4. Blend until smooth: Blend all the ingredients together until you get a smooth, frothy mixture. This usually takes about 30-60 seconds, depending on your blender. If the lassi is too thick, add a little more water, one tablespoon at a time, until it reaches your desired consistency.
  5. Taste and adjust: Give the lassi a taste and adjust the seasonings as needed. You might want to add more dill for a stronger dill flavor, more ginger for extra zing, or more sweetener if you like it sweeter. This is where you can really make it your own. What does it mean for you?
