Add the onions and garlic: Add the diced onion and minced garlic to the skillet with the sausage. Cook until the onions are softened and translucent, about 5-7 minutes. This step adds a foundational flavor to the lasagna, so take your time.
Stir in the apples: Add the peeled and diced apples to the skillet. Cook until they are slightly softened, about 5 minutes. The apples should retain some of their texture, not turn to mush. Mushy apples are no good.
