Easter is a time for family, feasting, and… inevitably, leftovers. Every year, I find myself staring down a mountain of ham, wondering how to make it exciting again. This year, I decided to think outside the box, or rather, outside the oven. Inspired by the vibrant flavors of spring, I created these Ham and Asparagus Spring Rolls, and let me tell you, they're a game-changer. Seriously, if your looking for a way to use up that ham, you have found it!!
These aren’t your average spring rolls; we're taking leftover Easter ham, pairing it with tender asparagus (because, spring!), and wrapping it all up in delicate rice paper wrappers. The result? A delightful combination of textures and tastes that’s light, refreshing, and surprisingly easy to make. Think crispy, savory, and utterly addictive. I mean who doesnt like a tasty crispy spring roll? I know i do!!!

Prepare the Asparagus: Wash the asparagus spears thoroughly. Snap off the tough ends. Blanch the asparagus in boiling water for about 2-3 minutes until they turn bright green but are still crisp. Immediately transfer them to an ice bath to stop the cooking process. Drain well and set aside. This keeps them a vibrant green.
Slice the Ham: Cut the leftover Easter ham into thin strips, about 2-3 inches long. This makes them easier to roll into the spring rolls. If you have larger pieces, you can dice them into smaller cubes first and then slice.
Prepare the Rice Paper Wrappers: Fill a shallow dish or pie plate with warm water. Dip one rice paper wrapper into the warm water for about 5-10 seconds, until it becomes pliable but not too soft. Be careful not to oversoak; it should be flexible, not falling apart.
Assemble the Spring Rolls: Lay the softened rice paper wrapper on a clean, flat surface, like a cutting board. Place a few slices of ham and a few asparagus spears in the center of the wrapper, leaving about an inch of space on either side. Don't overfill the wrapper, or it will be difficult to roll.
Roll the Spring Rolls: Fold the sides of the rice paper wrapper inward, covering the filling. Then, starting from the bottom closest to you, tightly roll the wrapper forward, like you're rolling a burrito. Keep the roll tight to prevent it from falling apart. Apply gentle pressure as you roll.
Repeat: Repeat the process with the remaining rice paper wrappers, ham, and asparagus until all the ingredients are used up. Keep the finished spring rolls covered with a damp paper towel to prevent them from drying out.
Serve: Serve the Ham and Asparagus Spring Rolls immediately with your favorite dipping sauce. Peanut sauce, sweet chili sauce, or a soy-ginger sauce all pair wonderfully. If not serving immediately, store them in the refrigerator, wrapped individually in plastic wrap, for up to 24 hours. Although I recommend eating them immediately if you can!
Optional: For an extra layer of flavor, add other fresh ingredients like mint leaves, cilantro, or shredded carrots along with the ham and asparagus.
