  1. First, gather your ingredients: You'll need all-purpose flour, baking soda, baking powder, ground cinnamon, ground ginger, ground nutmeg, ground cloves, salt, unsalted butter, granulated sugar, brown sugar, pumpkin puree, egg, vanilla extract, and instant espresso powder.
  2. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper. This helps prevent the cookies from sticking and makes for easier cleanup.
  3. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, ginger, nutmeg, cloves, and salt. Make sure there aren't any lumps! This ensures the spices are evenly distributed throughout the dough.
  4. In a separate large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. I like to use an electric mixer for this, but a sturdy wooden spoon will work too.
  5. Beat in the pumpkin puree, egg, and vanilla extract until well combined. Don't overmix! Overmixing can lead to tough cookies.
  6. Dissolve the instant espresso powder in a teaspoon of hot water. Add this to the wet ingredients and mix well. This is what gives the cookies that lovely latte flavor.
