Grab your crockpot: A 3-quart or larger slow cooker works best. Make sure it's clean and ready to go!
Prep the corned beef: If you bought sliced corned beef (like from the deli), give it a rough chop. You want bite-sized pieces, not long, stringy strands. About a cup and a half is right on the mark.
Drain the sauerkraut: This is important! Nobody wants a watery dip. Squeeze out as much excess liquid as you can. A good squeeze will do the trick. I usually use paper towels for this.
Mix it up: In the crockpot, combine the chopped corned beef, drained sauerkraut, cream cheese (softened!), Thousand Island dressing, and shredded Swiss cheese. Give it a good stir to make sure everything's evenly distributed.
Cook low and slow: Cover the crockpot and cook on low for 2-3 hours, or until the cheese is melted and bubbly and the dip is heated through. Stir it occasionally to prevent sticking and ensure even melting. I set a timer so i dont for get. Lol.
